Angel Flake Cookies
Cookie Ingredients
1/2 cup softened butter
1/2 cup Crisco
2 cups white sugar
2 beaten eggs
2 tbs vanilla
1 cup milk
4 1/2 cups flour
1 tbs baking powder
1 tsp baking soda
1/2 - 1 cup of powdered sugar for rolling
Filling Ingredients
1 cup softened butter
1 cup crisco
2 tsp vanilla
2 cups sugar
3/4 cup of evaporated milk (12 oz can)
Cookie Instructions
Preheat oven to 350.
Cream together the butter and Crisco.
Add sugar, eggs, vanilla, and milk and mix well. Batter will appear lumpy with chunks of butter/Crisco unincorporated.
Add flour, baing powder, and soda - mix just until combined.
Drop by the teaspoon full (or using smallest cookie scoop) into powdered sugar and roll to coat.
Place on a greased or parchment lined cookie sheet.
Bake at 350 for 10 minutes.
Cool completely and then cut off the tops with a serated knife. (probably 1/4 - 1/3 of the way through the cookie so the top is thinner than the bottom).
Fill cookies with a decent amount of filling and replace the top.
Dust with additional powdered sugar for serving.
Filling Instructions
Cream together butter, crisco, vanilla, and sugar until very fluffy.
Add evaporated milk.
Fill completely cool cookies.
Tips
Do not place the cookies on the cookie sheet until you are ready to bake (don’t work too far ahead, they spread weird if they sit on the sheet before baking)
This filling recipe is doubled from the original as we did not have enough. You should have enough to be generous while filling with the filling recipe as is.
